I’m thinking a poached egg and salmon?

I’m thinking a poached egg and salmon with American cheese on English muffin topped with hollandaise. What do you think? Before I ruin the salmon do you think it will be good? I’ve had a crab cake eggs benedict and loved it. Just not sure about the salmon. Thanks in advance for your opinion.

I’m not sure American cheese goes with salmon, but to each his own
